Groundnut stew with greens
Rich peanut and tomato stew with lean turkey and plenty of greens — West African comfort, steady and warm.
Groundnut soup is Ghanaian comfort at its deepest — peanut, tomato and slow-simmered meat. Unsweetened peanut butter and lean turkey keep the richness honest, and a double handful of greens makes the pot even more generous than tradition demands.
Ingredients
- Turkey breast, diced400g
- Unsweetened peanut butter4 tbsp
- Chopped tomatoes400g tin
- Tomato purée1 tbsp
- Onion1
- Fresh gingerthumb-sized piece
- Garlic3 cloves
- Spring greens or kale200g
- Chicken stock (low salt)600ml
- Chilli flakes1/2 tsp
Method
- 1Soften the onion, garlic and ginger in a splash of stock in a large pot.
- 2Add the tomato purée and chilli, then the tomatoes; simmer 5 minutes.
- 3Whisk the peanut butter with a ladle of hot stock until smooth, and stir it in with the rest of the stock.
- 4Add the turkey and simmer gently, uncovered, for 25 minutes, stirring now and then as the stew deepens and thickens.
- 5Stir in the shredded greens for the last 5 minutes. Serve with rice balls, brown rice, or boiled yam.
