Groundnut stew with greens

Rich peanut and tomato stew with lean turkey and plenty of greens — West African comfort, steady and warm.

Groundnut soup is Ghanaian comfort at its deepest — peanut, tomato and slow-simmered meat. Unsweetened peanut butter and lean turkey keep the richness honest, and a double handful of greens makes the pot even more generous than tradition demands.

  1. 1Soften the onion, garlic and ginger in a splash of stock in a large pot.
  2. 2Add the tomato purée and chilli, then the tomatoes; simmer 5 minutes.
  3. 3Whisk the peanut butter with a ladle of hot stock until smooth, and stir it in with the rest of the stock.
  4. 4Add the turkey and simmer gently, uncovered, for 25 minutes, stirring now and then as the stew deepens and thickens.
  5. 5Stir in the shredded greens for the last 5 minutes. Serve with rice balls, brown rice, or boiled yam.
