Japanese Miso-Glazed Salmon
Salmon fillets marinated in a white miso and mirin glaze, grilled until caramelised, and served with steamed bok choy and sesame rice.
Ingredients
- Salmon fillets2 (approx 150g each)
- White miso paste2 tbsp
- Mirin1 tbsp
- Low-sodium soy sauce1 tsp
- Sesame oil1 tsp
- Honey1 tsp
- Bok choy2 heads, halved
- Jasmine rice150g dry weight
- Sesame seeds1 tsp
- Spring onion2 stalks, sliced
- Fresh ginger½ tsp, grated
Method
- 1Mix miso, mirin, soy sauce, sesame oil, honey, and ginger to make the glaze. Spread over salmon fillets and marinate for at least 15 minutes (up to 24 hours in the fridge).
- 2Cook rice according to packet instructions. Finish with a few drops of sesame oil and a sprinkle of sesame seeds.
- 3Preheat grill to high. Place salmon on a lined baking tray skin-side down. Grill for 8–10 minutes until the glaze is caramelised and salmon is just cooked through. Watch carefully — the miso can burn quickly.
- 4Steam or stir-fry bok choy with a little ginger and sesame oil for 2–3 minutes.
- 5Serve salmon on rice with bok choy alongside. Garnish with spring onion.
