Indian Upma (Savoury Semolina)

A South Indian breakfast staple — semolina toasted with mustard seeds, curry leaves, ginger, and colourful vegetables.

  1. 1Dry-toast the semolina in a pan over medium heat, stirring constantly, for 3–4 minutes until lightly golden and fragrant. Set aside.
  2. 2In the same pan, heat coconut oil. Add mustard seeds and let them pop. Add curry leaves, ginger, and green chilli — fry for 30 seconds.
  3. 3Add onion and cook until translucent, about 4 minutes. Add tomato and peas, cook 2 minutes.
  4. 4Slowly pour in boiling water, stirring continuously to prevent lumps. Stir in the toasted semolina in a steady stream.
  5. 5Cover and cook on low for 3 minutes until set. Squeeze over lemon juice, garnish with coriander, and serve.
