Ackee & Saltfish
Jamaica's national dish. Creamy ackee with seasoned saltfish, scotch bonnet, onion, and peppers.
Ingredients
- Ackee (canned or fresh)1 can / 12 pods
- Saltfish (salt cod)200g
- Onion1 medium
- Scotch bonnet pepper½, deseeded
- Bell pepper (mixed)1
- Spring onion3 stalks
- Thyme2 sprigs
- Coconut oil1 tbsp
- Tomato1 medium
Method
- 1Soak saltfish overnight or boil twice to remove excess salt, then drain and flake into chunks.
- 2Heat coconut oil in a pan. Sauté onion, bell pepper, and tomato until softened, about 5 minutes.
- 3Add flaked saltfish, scotch bonnet, spring onion, and thyme. Cook for 3 minutes, stirring gently.
- 4Carefully fold in the ackee — do not stir vigorously or it will break up. Heat through for 2 minutes and serve immediately.
