Cornmeal porridge, gentler rise

The Saturday-morning classic, creamy with oat milk and warm spice — sweetened gently so it loves your blood sugar back.

Cornmeal porridge has warmed Caribbean mornings for generations. Traditionally finished with condensed milk, this version keeps the cinnamon, nutmeg and vanilla that make it home, and lets oat milk and a little honey do the sweetening — a gentler rise for your blood sugar, same hug in a bowl.

  1. 1Whisk the cornmeal into the water until smooth — no lumps.
  2. 2Warm the oat milk with the cinnamon stick, nutmeg and salt in a pot over medium heat.
  3. 3Pour in the cornmeal mixture, whisking as you go, and simmer gently for 12–15 minutes, stirring often, until thick and creamy.
  4. 4Stir in the vanilla and honey, taste, and add a splash more oat milk if you like it looser.
  5. 5Serve warm with a dusting of cinnamon.
