Baked plantain chips with cinnamon
Thin-sliced plantain, oven-crisped with a whisper of cinnamon — the crunch without the fryer.
Fried plantain chips are the roadside snack of the whole region. Baking slices thin and hot keeps the caramel edges and the salty-sweet joy — the fryer simply is not invited.
Ingredients
- Green-yellow plantains2
- Rapeseed oil2 tsp
- Ground cinnamon1/2 tsp
- Pinch of sea salt
Method
- 1Heat the oven to 190°C (fan 170°C). Slice the plantains as thinly as you can — a mandolin helps.
- 2Toss the slices with the oil, cinnamon and the smallest pinch of salt.
- 3Spread in one layer on lined trays and bake 15–18 minutes, turning once, until golden and crisp.
- 4Cool for 5 minutes — they crisp further as they cool — then try to share.
