Egusi Soup with Fufu

West African classic — ground melon seed soup with leafy greens, palm oil, and stockfish. Served with smooth fufu.

  1. 1Soak stockfish overnight. Wash and pre-cook briefly. Set aside.
  2. 2Heat palm oil in a pot. Mix egusi with a little water to form a paste and fry in the oil, stirring, until golden — about 10 minutes.
  3. 3Add blended onion and scotch bonnet, crayfish, and stock. Stir in stockfish or beef. Simmer 20 minutes.
  4. 4Add leafy greens in the last 5 minutes. Adjust seasoning.
  5. 5For fufu: bring water to a boil, add cassava flour, and stir vigorously until thick and smooth. Serve egusi alongside.
